We are excited to announce a two-night event at the Chef’s Counter at Odo with Chef Hiroyuki Kaneda from Narayamachi AO.

“Evolution of Japanese Cuisine - Fukuoka to New York”

This special four-hands experience will feature signature dishes from both Chef Hiorki Odo and Chef Hiroyuki Kaneda.  The evening will highlight the range that Japanese cuisine has, focusing not only on classic techniques, but also the boundaries of what progressive Japanese cuisine can evolve into.  

Chef Kaneda’s AO is considered one of Japan’s most coveted dining destinations, as reservations are booked out a year and a half in advance.  Chef Kaneda’s culinary style transcends genres, offering a progressive style of Japanese cooking - seamlessly blending the delicate sensibilities of Japanese technique with the structure of French cooking.  His signature dishes include his celebrated crab curry, inspired by his time at Gaggan, as well as a refined dessert shaped during his years at RyuGin.

Chef Odo and Chef Kaneda will work side-by-side to create a unique, one-time-only experience.

Chef Kaneda Bio:

Chef Hiroyuki Kaneda was born in Shimonoseki, Yamaguchi, and developed his culinary career across a range of acclaimed restaurants in Japan and abroad.  After early formative experience in French cuisine, he expanded his international perspective through travel in Europse, as well as staging at Gaggan in Bangkok - ranked No. 1 on Asia’s 50 Best Restaurants list.  Returning to Japan, Chef Kaneda spent approximately five years at three-Michelin starred RyuGin, where he refined his technical precision and contemporary Japanese techniques.  He later joined La Maison de la Nature Goh, ranked No. 36 on Asia’s 50 Best Restaurants list - before opening Narayamachi AO in 2019.
